For those with a dairy intolerance; for those who wish to shed a few extra holiday pounds without sacrificing the joy of  cheese; for those who need to cut back on animal fat; for our vegan friends; or those hovering around the fringe of veganism and wondering if they should take the plunge …  finally there are cheese alternatives that have the taste and texture of some of your favorite cheeses.

I know, I know. Many of us have tried the packaged soy cheeses that claim to taste like the real thing, but don’t.  But a brilliant new cookbook, “The Non-Dairy Formulary” by chef Skye-Michael Conroy, is changing the non-dairy landscape.
